
A friend shared this Kefir recipe to me. I enjoyed it a so much when she let me taste it. I haven’t tried making it yet but it’ll be my next adventure in the kitchen. I’m sure this will be delicious!
- 5 c beef or chicken stock
- 1/3 c flour
- ¾ c brown rice
- ¾ c kefir
- ¼ c margarine
- 1 crushed garlic glove
- 1 egg yolk
- Pinch of salt
- Pinch of cayenne pepper (optional)
- 2 tbsp mint powder (optional)
- Place the brown rice in stock and boil it until the rice is soft.
- Sautee garlic in margarine (leave a tablespoon for later use), add flour, stir until it turns brown.
- Gradually stir in rice and stock. Stir constantly. In a separate bowl, whisk kefir and egg yolk.
- Gradually add to the soup mixture; stir constantly. Cook them until it’s about to boil.
- Add salt and mint.
- Remove from heat.
- In a small pan, melt the remaining margarine and add the cayenne pepper.
- Wait until it browns lightly and pour over the soup mixture.
- Stir through and serve.

When you say “kefir” here, do you mean kefir milk, or the grain?
